For the past 8 weeks I've interviewed some of the best Tex-Mex Barbecue joint's for our #TexMexBBQSeries. This week's episode will conclude our Series and we are definitely ending with a Bang!! In our Final episode of the series I chat with the OG of Tex-Mex BBQ, Miguel Vidal of Valentina's Tex-Mex Barbecue. This is easily one of my favorite interviews since I started the podcast. I'd never heard of a Tex-Mex Barbecue joint until I ran across Valentina's a few years back. The Smell of Mesquite, the fluffy tortillas, the Beans, the fresh Salsa, the smashed avocado with salt, the beautiful brisket, heck everything Valentina's offers reminds me of my upbringing in West Texas. Miguel grew up in San Antonio Texas and worked in the restaurant industry from an early age. He was a talented Soccer Player that aspired to be a professional but a knee injury caused him to trade the Pitch for a Lot filled with Barbecue Pits and Picnic Tables. This is an inspiring rags to riches story that only keeps getting better. I hope you enjoy this episode!

For our 7th installment of our #Texmexbbqseries , I chat with Esaul Ramos of 2M Barbecue and Catering in San Antonio Texas. From the first time I met Esaul, we hit it off and became good friends. We often text each other on weekends when there is a good UFC fight Card and any time I'm in or around San Antonio you can always find me there. 2M's story is one filled with Grit, Determination and overflowing with passion, walking into the building you can see the results of their blood sweat and tears. They literally put this restaurant together with their own hands, it's not fancy and they don't have a large state of the art pit room with several rigs. They have one Pit an incredible team and some badass food. This formula has landed them on the Texas Monthly Top 50 List, Food and Wine's Best Foods in America and many other publications. We chat about their incredible journey and some really cool upcoming events! We even talk a little UFC and Cars! I hope you enjoy the show!!

For our 6th installment of our #Texmexbbqseries , I chat with Tony Salazar of The Taste of Texas Tex Mex BBQ in Beaumont TX. Tony Tone AKA Pork Skin has been cooking since he was 16 years old and in 2016 he flipped a switch and started an underground BBQ Business. This Welder by Trade is born and raised on the Gulf Coast of Texas and grew up with Cajun and Mexican cultures. Eating Gumbo with Tortillas was a way of life for him and his family and now he's bringing those influences to his dishes. Through a chance encounter he met Michael Fulmer of Houston Barbecue and when it was time to research potential candidates for the Inaugural Tex-Mex Block Party, Fulmer reached out to Tony. Not only did Tony prove that he could run with the big boys of Tex-Mex Barbecue, he was one of the standouts at the event. I have a feeling we will be hearing a lot more from Tony in the near future. For our 5th installment of our #Texmexbbqseries , I chat with Brandon Hurtado of Hurtado Barbecue in Arlington Texas. Brandon is a successful Business Professional that owns a Marketing Agency in Arlington. He's born and raised in the DFW metroplex and his love for food and cooking dates back to his Grandmother and mothers cooking and his dad smoking Briskets as far back as he can remember. Although Barbecue was never in his plan he quickly got sucked in by the bug that catches many folks in the Barbecue world. He never thought it would lead to a business and why would he, he was already living out his marketing dream and getting a good night sleep every night, but the newly discovered passion was pulling him in. His Creative dishes along with a solid lineup of great central Texas Barbecue has really drawn quite a bit of attention to him. With a little help from Local and social media the business has grown enough that he's now a couple of months away from opening a brick and mortar location. This is an inspiring story filled with passion, hard work and dedication. I hope you enjoy it!

For our Fourth installment of our #Texmexbbqseries , I chat with Ray and Genesis Dominguez of Ray's Texas Smoke Barbecue of Houston Texas. Ray's has been slinging Barbecue since 2015 and he's been incorporating dishes from his Mexican Roots into his menu from the start. They're introducing folks to classic Mexican favorites like Tortas, Chicharones preparados, Pepinos con chile, Paletas de pepino con chile and even an agua mineral preparada. They were a participant at the inaugural Tex-Mex Block Party hosted by Houston Barbecue and they handed out an incredible sausage called Chingadera Sausage and some carnitas tossed in Salsa Verde. This is a Husband and Wife Team with a big Dream, full-time jobs, and a popup usually every weekend. For our third installment of our #Texmexbbqseries , I chat with Joseph Quellar of JQ's Tex-Mex BBQ in Houston Texas. JQ's is an Underground Tex-Mex BBQ joint that's slinging BBQ at popups and at several other events and collaborations. He's researched the history of Tex-Mex cuisine and he prides himself on keeping those traditions alive. Although he cooks some great Central Texas Style Barbecue, he likes to think of himself as a Tex-Mex Joint first, I don't blame him with some of the incredible dishes that he's throwing down. We chat about his creative Menu which includes items like Fresh Made Chimichangas, Brisket Tamales with Queso, Puffy Tacos and so much more. He tells us about how he started this BBQ adventure and the cool projects he has coming up which include an incredible collaboration this weekend with Khoi Barbecue, the Houston Barbecue Showdown and the Butchers Ball. He even shares a bit of his personal side with us. You won't want to miss this one.

He's a family man that believes that God has a plan for him and his family has always been there to help him along the way. Tex-Mex BBQ is booming right now, over the next few weeks I'll be bringing you the stories of some of the up and coming Tex-Mex BBQ folks around!
First up on the Tex-Mex Barbecue Series is Eduardo Ortiz from Eddie O's Texas Barbecue. This is an inspiring story of a young man with determination and passion for work, entrepreneurship and Family. Eddie started his BBQ career like many others, doing popups whenever he had some extra time and setting up wherever he could find an opportunity. Although he's had success in other ventures and in Corporate America, he finally feels like he's found his true calling. He's been able to build his brand based around his family and his culture and now with a permanent location on Saturdays, he's able to showcase his creativity as well.
