They're celebrating their two year Anniversary on Saturday August 17th & they have a big Raffle benefiting the Weekend Snack Sack Program in Slaton an organization that provides weekend food for kiddos. In our Interview we talk about how they've built their business with help of their family and their community. There are so many touching examples of the Small Town bond and the BBQ family coming together. We also talk about a visit from Daniel Vaughn and making Texas Monthly's best bites of 2018. In this Episode I interview Zardrell McNight of Z's Craft Barbecue in Grundy County Iowa. Originally from Richmond Virginia this young man started cooking barbecue at an early age and After having aha moment at ZZQ Barbecue in Richmond Virginia, he decided to start chasing his dream of starting a Texas Style Barbecue business. He prides himself in cooking with 100% Wood on a traditional 1000 gallon offset smoker and he has another Pit on order with a popular Pit Builder in Austin Texas. Although he's currently focused on Popups and caterings he has big plans for the future. I hope you enjoy this story!

In this Episode I sit with Daniel Weinstock of Maple Block Meat Co in Culver City California. I first Met Daniel at his beautiful restaurant for a Dinner he was hosting with Author and Chopped Champion Ed Randolph. They had an incredible feast for a lucky group of BBQ fanatics like myself, it was definitely a memorable night. Maple Block has been open for 4 yrs now and business is booming. I dropped in during Lunch Time and the flow of the lunch crowd was smooth and fast paced. Daniel discovered his love for the Culinary World at a very early age and he worked his way up to a job as a Sous Chef at an elite Restaurant in Beverly Hills. He went on to College learned the skills that later helped him start his own business! He's had a visit from Texas Monthly's Daniel Vaughn, he has a recipe in Ed Randolph's book, Smoked and many great articles from several other sources. He even has a dinner coming up with Phil Rosenthal on August 11th! They focus on the Craft and are always looking for ways to improve. While I was there I got a taste of a new Sausage they're trying out using Togarashi Spices, and it was to die for. I wanted to take a few links home with me! I hope you enjoy this inspiring story. In this Episode I interview Russ Winer of Smokey Jones Barbecue out of Culver City California. Russ a Transplant from Upstate New York and his Wife Vivian a native of California, have been slinging some Barbecue from their own driveway for just over a year, but Russ has been cooking for quite some time. He cooks low and slow on an offset smoker and also mixes it up on the Santa Maria Grill. Although they're currently focused on catering and their home popups, they have big plans for the future with a new Pit from a builder in Texas! Hmm… I wonder who it could be. In this Episode, I interview Jeff and Christine Fitchett of Magillas Barbecue. Owners, Jeff an Ex- Marine Corp Sargent and his wife Christine started on this journey about three years ago. A simple fundraiser for one of their kids turned into an idea for a business. They Pride themselves in providing the best quality with the best service, their motto is " it's not the smoke, it's not the rub, it's everything done right". Like many others in Southern California, they've had to overcome some obstacles in order to get the right licensing but on the day of this interview they'd just signed a lease on a commissary kitchen and they're now poised to take their business to another level. They are very thankful for their blessings, especially their Children and extended family for being there for help and support in every step of the way. Their Story is just getting started. Barbecue in California is Booming, I'm lucky to have moved here to witness this exciting era. The Underground scene is part of the DNA here, you can find all types of foods, fruits and deserts and even Drinks in underground settings. This has definitely contributed to the Barbecue explosion that we're seeing in SoCal. Over the next few weeks I'll be introducing you to some really cool popups that you might not have heard of yet but you will! Some of these folks are catering and cooking in their backyards and others are doing popups at breweries, Farmers markets and other cool establishments. For those folks that say there is no good Barbecue in California, you need to tune in and check some of these folks out!!!
In this episode I sit down with Grant Mason of Foundry Barbecue in Orange County. Grant is a Family Man that is born and raised in Huntington Beach. He got hooked on BBQ while he was in College in Utah then after moving back to California and missing his go to spot he decided to start cooking his own. Now a few years later he's taking his hobby to a new level. Earlier this year he spent time with BBQ Journeyman and Pitmaster at many top BBQ Joints including his own Goldees BBQ which will be opening in the fall of 2019, Mr. Dylan Taylor. This experience has given Grant the confidence to continue his trek towards opening a joint of his own. Oh and by the way, he's cooking on a Sweet Fatstack Smoker! With two young Children, his wife Kara pitches in when she can but she's known for putting out some incredible cookies at their popups but you must arrive early if you want some!
