In this episode, I chat with Veronica Meewes, the gal behind the book entitled Texas BBQ, the Art of Low and Slow. Veronica spent three years traveling around Texas, gaining a thorough knowledge of barbecue, eating some of the most delicious food, and listening to some amazing stories. Along with these stories, this beautiful denim-covered book displays some stunning illustrations from several familiar photographers. I personally used it as a kind of yearbook while I was at the Texas Monthly BBQ Festival, getting folks to sign it for me, and I plan to carry it with me when I make my barbecue runs so I can fill it up! Veronica is an Austin-based food, travel and culture writer whose work has appeared in national and regional outlets such as Forbes Travel Guide, Food & Wine, Travel & Leisure, Zagat, Afar, PUNCH, CN Traveler, The Local Palate, Eater, Cosmopolitan, The Today Show, Tasting Table, Texas Monthly, Texas Highways, Austin Monthly, The Austin-American Statesman, The Austin Chronicle and more. Veronica is currently a senior copywriter for Whole Foods Market, where she crafts culinary-focused campaigns across digital, print, packaging, and in-store experiences. She also holds WSET Level 2 certification and is a Certified Sake Professional and a trained sensory analyst. Veronica’s fifth book project, Texas BBQ: The Art of Low and Slow, was released by HarperCollins in November 2025.

For my first episode of 2023, I chat with my buddy Hector Garate of Palmira Barbecue. Hector burst into the BBQ Scene with his Puerto Rican Roots and creative mind and he's blown away his customers with amazing Carolina Latino-inspired Barbecue. He's had some incredible collaborations including one with my good buddy, John Bates of Interstellar, and just this past weekend with Koi Barbecue in Houston.
